Heartless haven't been common enough throughout history, up until quite recently in the setting, to have that kind of following. They were often mysterious strangers, who acted and spoke in strange ways and with powers that were fearsome and inexplicable. Most religions in the world have ideas about Heartless (of varying levels of accuracy), but none of them explicitly worship them as a whole, and even claims that a figurehead or central being of worship are a Heartless are uncommon. Wordbearers have often been the subject of small-scale hero worship and cults of personality, though.
There aren't any large-scale organization of Heartless, since beyond the most recent crop of them they are far too sparsely populated and too disunited in their interests. However, of particular note are a pair of Heartless who presently are at work in North America, who have taken it as their mission to turn as many people as possible into Heartless, whether they like it or not.
The Script is not a true language, and even calling Words words is something of a misnomer, since there isn't really any linguistic component to how they work. And, you are correct in your estimation, the four Words Gambler, Flier, Killer, and Martyr are by far the most common, to the point where I still haven't thought of what others there might be in specific, since all of the examples of wordbearers receiving a Word that I've thought of or have been given so far point to one of them.
